Cucumber Sesame Salad



Ingredients
·         2 medium cucumbers, peeled if desired, sliced very thinly
·         2 tablespoons rice wine vinegar
·         1 tablespoon sesame oil
·         1 tablespoon sugar
·         2 teaspoons soy sauce
·         ½ teaspoon salt
·         1 teaspoon toasted sesame seeds
·         Crushed red pepper flakes, to taste
Instructions
1.     Slice cucumbers and place on paper towel to remove some of the moisture
2.     In a medium bowl, whisk together all other ingredients and add cucumbers. Stir to coat.
3.     Taste and add more crushed red pepper flakes if desired.

4.     The salad may be made up to 4 hours ahead of serving but should be served the day it is made.

Ejercicios Pecho 01



GREEN DETOX SMOOTHIE
Serves 2

INGREDIENTS
  1. 1.5 cups kale, de-stemmed (or spinach, chard etc.)
  2. 1/2 english cucumber, chopped
  3. 2 stalks celery, chopped
  4. 1 small lemon, peel removed
  5. 1 ripe banana, frozen
  6. 1 cup pineapple (frozen)
  7. 2 tablespoons chia seeds
  8. 1/2-1 teaspoon spirulina powder (depending on preference)
  9. 1 cup unsweetened almond milk
  10. 1 cup cold, filtered water
  11. handful of ice (optional)
INSTRUCTIONS
  1. Blend all ingredients in a high-speed blender until smooth and creamy.
NOTES
  1. Optional: Sometimes I add a small knob of fresh ginger for a digestive aid and extra zing!

Parmesan Roasted Carrots



Ingredients
·         8-10 carrots, peeled
·         2 Tbsp butter, melted
·         2 tsp garlic, minced
·         4 Tbsp Parmesan Cheese
·         1 tsp chopped parsley

Instructions
1.    Preheat oven to 400 degrees F.
2.    Mix melted butter and garlic together.
3.    Place carrots on a parchment paper lined baking sheet.
4.    Drizzle with butter/garlic mixture.
5.    Roast in oven for 15 minutes.
6.    Shake pan ocassionally to rotate carrots.
7.    Top with cheese and roast for another 10 minutes or until carrots reach desired doneness.

8.    Top with parsley and serve immediately
